Imagine a van parked by the side of the road, in the middle of nowhere. And there, a pineapple vendor named Anas. Yes, you read that right: Anas, the pineapple seller. Sometimes things just happen!
But Anas doesn’t just sell succulent fresh pineapples ready to eat. He also has a specialty that attracts the curious and fans of local street food: his famous pineapple sorbet.
You’ll find it at Takamaka Boutique Winery, not far from Mare aux Vacoas.
An explosion of flavors
Behind his stand, Anas prepares this unique dessert with a special machine. Before your very eyes, he transforms the pineapple into a finely shaved sorbet, which he then enhances with a combination of typically Mauritian flavors:
- Salt and chillies to spice things up
- Pineapple confit for an even fruitier touch
- Tamarind sauce for a light acidity
